University of Maryland Department of Dining Services is unique in that it administers all dining and food services at the University of Maryland, including resident dining; cafes and quick food/convenience shops; full-service, delivered and pick-up catering; concessions; and full-service restaurants. During our time here we observed various aspects of the food service operation including management, finance, and human resources.

Among the activities and projects we completed include:
- Wrote monthly nutrition articles to be posted in the "Nutrition Resources" section of the Campus Dining website
- Created monthly tips to be displayed as table tents in the dining halls as well as posted on their website
- Developed employee wellness walls
- Created educational nutrition posters
- Conducted an employee inservice on the safety and proper use of a dishwashing solution
- Created, implemented, and analyzed a survey about vegetarian options offered on campus
- Aided in serving the student body during lunch hours
- Assisted in registering students for a March Madness contest during a themed dinner
- Learned about the University's green and sustainability efforts
- Participated in food receiving, storing/inventory, and purchasing
- Planned and executed a gourmet lunch menu for final presentation meal
